Chocolate Fix- White chocolate and smarties brownies

My white chocolate and smarties brownies.

This week I wanted to make a comfort bake, so what better than brownies? I looked at a few brownie recipes online and based my own on an amalgamation these. I used white chocolate and smarties. I looove white chocolate in brownies. It has this amazing vanilla like taste when baked which contrasts perfectly with the dark chocolate taste of the brownie. Smarties were a purely nostalgic choice. The colourful little chocolates remind me of my childhood and when baked the taste is just like the Millie's Cookies 'cake pop' my brother and I used to love as children. They also look pretty cool too!

Similar to mine is this recipe from BBC Good Food. Combined with 'how to make the perfect brownie' tips from the Guardian and a few extras of your choice you could have the best brownies ever! Alternatively follow my recipe below. They were pretty good too, I promise!

Ingredients:
200g Butter
200g Plain chocolate
100g plain flour
50g Cocoa powder
150g white chocolate
3 tubes of smarties 
3 Eggs
300g Caster sugar



1. Gently melt chocolate and butter in a bowl. Set aside to cool.




2. Whisk eggs and caster sugar for up to 10 minutes until thick like milkshake.



3. Pour in the cool chocolate and butter mixture and stir in. Next sieve in the flour and cocoa powder and mix in a figure of eight, gently so not to knock the air out.



4. Mix in 100g of white chocolate (chopped) and two tubes of smarties.



5. Line a baking tray with greaseproof paper and fill with brownie mixture. Decorate with remaining smarties and white chocolate.



6. Bake for 25 minutes 180C/ Gas mark 4. The top should be shiny and cracking slightly, with a bit of movement still in the mixture.



7. Leave to completely cool on a wire rack. Once cool cut into rectangles.




8. Enjoy!

These brownies were yummy and only lasted a couple of days! My top tip would be to allow them to cool fully, over night if you can, before cutting. 
Although very tasty next time I would leave them in the oven just a little bit longer as they were sliiightly too gooey in the middle (I'm not complaining!).
